German potato pancakes Recipe:
Ingredients:
1 pound peeled and grated potatoes
1 small onion, finely chopped
1 beaten egg
3 tablespoons flour
Salt and pepper to taste
Vegetable oil for frying
Optional for serving: applesauce, Sour cream, smoked salmon, sauerkraut
Instructions:
First grate the potatoes, then wrap them in a clean kitchen towel and squeeze them to remove excess moisture.
Mix the grated potatoes with the finely chopped onion in a large bowl.
In a separate bowl, beat the egg, add the flour, salt and pepper and stir until smooth.
Add the egg mixture to the potatoes and onions, making sure everything is well mixed.
Heat a skillet over medium-high heat and add vegetable oil to cover the bottom.
Add a generous amount of the potato mixture to the pan and flatten it with a spatula to form a pancake.
Be careful not to overcrowd the pan.
Fry each pancake for 3-4 minutes on each side until golden brown and crispy.
Drain on a plate lined with paper towels.Serve hot with dressings and side dishes of your choice.

Keep the pancakes warm in a low oven if you are not serving them immediately.
